- 1 1/2 cup red lentils
- 2-3 leaks cut in cm long pieces
- 4-5 medium waxy potatoes, diced
- 1 1/2 cup milk
- 3 cups broth
- ~1/3 cup cream
- 1 tsp cider vinegar
- 2 tbsp dijon mustard
- Melt butter and sweat the leaks for about 10min on medium low
- Add lentils, potatoes, milk and bring to a boil
- Add enough broth ~to cover everything
- Simmer 25 minutes uncovered, adding broth as necessary
- Add cream and simmer for ~5-10min
- Add vinegar, simmer for 1 min
- Add mustard, salt and pepper and stir well
